A Vegetarian in Hillsborough County, how could that be? How could someone survive on not eating meat? Well, it can be done. I have been doing it for over twenty years now. I am a lacto-ovo vegetarian, which means that I eat minimal amounts of eggs and cheese. Yet, I am still alive and healthy.
The first thing that everyone always asks is why I became a vegetarian. I started reading a tremendous amount of books on vegetarianism and health. The research showed that true vegetarians had lower cholesterol and heart attacks, fewer incidences of certain cancers and were overall healthier. I made the big jump. My parents freaked out. Just imagine, I'm Korean-American. They thought I was moving to Atlanta or something like that. But it all worked out, I'm still here, I continue to eat the Korean dishes (without the meat) and I haven't withered away to my carnivorous dad's surprise. The second question that people ask is what differences have I noticed in my health. I have very high levels of energy. I weigh 145 lbs. on a good day, and I eat mostly fruits, veggies, nuts, seeds, grains, pasta, and tofu (that soybean stuff) all day. I eat small meals and also exercise every day. Research shows that the average American does not eat correctly and only 1% of kids eat healthy. That's right, a fruit rollup is not fruit and French fries are not vegetables. Heart disease is not the number one cause of death in China, like it is in the USA. Soybeans are very healthy. They are high in protein, fiber, vitamins and minerals. Regular cow's milk has steroids, antibiotics and growth hormones in it. The last question is how, where and what does my wife cook. My wife cooks a variety of different meals, but I am the only vegetarian in the Yong Kim's Household. The family has a choice and I support their decisions as long as they include a lot of vegetables and fruits. I eat at a wide variety of restaurants. Every place that I eat from has a Dr. Joe Special. It is the vegetarian meal from that restaurant. Every place that I go has something for me to eat and I am truly grateful for that. If someone wants to be a vegetarian, that's great, but it takes a lot of work and a wide variety of foods so that you do not develop vitamin deficiencies.
